Unfortunately, I’m still pushing through the same books as last week – but I’m eager to finish so I can start stuffing my kindle with holiday cheer. A few on my list this year are Wreck the Halls by Tessa Bailey, The Christmas Orphans Club by Becca Freeman, and Holiday Romance by Catherine Walsh. Do you have any you’d recommend?
Recipes I Tried
For Souper Sunday this we week, we made Broccoli and Cheese Soup. This recipe is one we’ve made and loved several times, but I will caution you to read the directions all the way through before you start. It may save you some “oh, crap” moments when you have to switch pots. (Or maybe that’s just me!)
Another quick dinner for the win this week: Cooked egg noodles in a pot, when they were almost done I added some broccoli florets to blanch. Drained and put back in pot, added some shredded chicken (I used leftover rotisserie meat), a jar of alfredo sauce, and about 1/2 – 3/4 cup pesto sauce, mixed well. Dumped it all into a greased 9 x 13 pan and added shredded mozzarella and parmesan. Baked at 350 for about 30 minutes.
