Everyday Beautiful is my recap of the things that brought me joy during the previous week.
This week was filled with highs and lows – it’s funny how they come hand-in-hand, the universe providing balance where we didn’t even know we needed it. 💖 Or maybe we should just blame it on the time change?
My oldest turned ten and it’s been hard to swallow. She also had her first choir performance this week.
I meal planned really well this week, so well that when our date night plans got cancelled, I had nothing to cook. Enter our emergency goulash recipe, that we almost always have the ingredients for (and I bet you do too). Cook half a package of egg noodles (wide or extra wide, doesn’t matter) in boiling water. Once cooked, drain and lay at the bottom of a greased baking dish. In a separate pot, cook 1 lb ground beef, until browned. Add 1 can whole kernel corn, drained and 1 can diced tomatoes, undrained and heat through. Spread mixture on top of noodles. Cover with shredded cheddar cheese (1-2 cups) and bake until bubbling and the cheese is melted, about 15-20 minutes at 375℉. Add chopped green onions if desired. Wah-lah!

Took a day off this week to spend with the hubs and start our Christmas shopping. A benedict is always a great way to start the day.
Our first stop was a kitchen store – and the cheese display stopped me in my tracks.
Next up, the bookstore! The smell, the knowledge, the beautiful covers. Gahhhhh!

As I reflect upon my week, so many things brought me happiness. It really helps overshadow the things that were tough to get through. Have you made your list of happy yet?
